When they crackle add onions and fry till golden brown. Add all the dry spices – turmeric, coriander, chilli powder and salt. Stir and then add the grated carrot and cabbage.
Mix everything well and cook on a low flame for 7-8 minutes stirring occasionally. The veggies should be cooked but still crunchy. Do not overcook them. Meanwhile make a smooth paste of ginger, garlic and little water in a blender jar. Once the veggies are done add this masala paste to it and mix well. Cook for another minute or two.
